The new shepherd’s hut at The Outbuildings, a restaurant with rooms on farmland near the beach, makes a cosy retreat for two. The bright-pink hideaway has a tiny wood-burning stove and great views of Snowdonia.

This old mansion just outside Cardigan has been restored over the past three years and is now a five-star guesthouse with five rooms (three of them are enormous). Local food, including scallops from the bay, is served around a central log-burner in the bright-red dining room.

Forget chintz-filled country houses – the decor in Geufron Hall’s four rooms ranges from Scandi cool to retro 1960s. There are plenty of rural charms, such as collecting your own eggs from the hen house for breakfast, and the owners mix a mean cocktail, too.

Victorian townhouse, Llangollen, Denbighshire
Manorhaus Llangollen, a boutique restaurant with five rooms, is the younger sister of Manorhaus Ruthin. Both are period properties with modern design and cool cocktail bars serving Welsh spirits, and both are in appealing, small Denbighshire towns.

Closed for several years, the Waun Wyllt, an 18th-century pub, has been restored and reopened. There are still lots of original features and real ales, but now there are five bedrooms, and imaginative food, too.

This Norman castle has six fairytale bedrooms, with thick walls, narrow windows, and leather furnishings. The two rooms up by the battlements are an 85-step climb – but at least guests will work off the king-sized breakfasts.

Art hotel, St Davids, Pembrokeshire
Twr y Felin started life as a windmill in 1806, was extended into a house, and later converted into a hotel. Now the Grade II-listed tower is becoming a more luxurious hotel, with 20 rooms, 100 pieces of modern art, and a fine dining restaurant.

Lakeside cabin, Cemmaes, Powys
Gwalia Farm, previously open only to campers, now has a wooden cabin on the banks of a small lake. Guests staying in the two-man lodge have sole use of the lake for swimming and canoeing, a private, wood-fired hot tub and a firepit on the veranda.

Y Talbot, a 400-year-old inn with slate floors, inglenooks and Welsh cask ales, has been recently refurbished. It now has 10 light and airy rooms, and lovely landscaped gardens and terraces.

An old barn at Trefloyne Manor now houses seven bedrooms, each with quirky features – the mezzanine bath platform in Coach House Two isn’t for shrinking violets. Expect sloping ceilings, wooden beams, exposed brick and Molton Brown toiletries.
